The Exta Viare di Oliva olive oil of San Donatino is produced with olives of our constituents for a minimum of 80% from plants of the Frantoio, Correggiolo, Moraiolo and Leccino varieties, alone or together, and for a maximum of 20% plants of other varieties of the area. Each olive is harvested by hand directly from the plant. The olives are placed in special fount boxes on each side to promote aeration and, consequently, a better conservation. Within 72 hours of harvesting, the olives are taken to the mills for processing, which combines a strong craftsman’s vocation with cutting-edge technologies that allow high standards of hygiene and health.
