Vineyard: Poggio ai Mori is a humpback hill surrounded by oak forest with two slopes, one to the north-west and the other to the south-east.
Soil: clayey loam with a generous presence of limestone on the north-west side, less accentuated and more balanced by shale on the south-east facing side.
Harvest: manual with selection of bunches in the field.
Vinification: the grapes are completely destemmed and crushed, the alcoholic fermentation is spontaneous, the skins are macerated for 3\4 weeks according to the needs of each individual vat, the pomace is softly pressed and then re-used in the field as well as the stalks. Malolactic fermentation also occurs spontaneously in the following weeks, sporadically the following spring.
Elevàge: the wine ages for approximately 30 months in the cellar in concrete and steel tanks. Elevàge: il vino fa un affinamento di circa 48 mesi in botti di rovere di slavonia da 30 ettolitri. Non produciamo la nostra Riserva tutti gli anni, ma solamente nelle vendemmie più felici.

Pure Sangiovese is the result of the assembly of our various varieties plots harvested at full ripeness.
The color is a not too deep red tending towards ruby and on the nose, as on the palate, the hints are of red fruits and undergrowth with also nuances of violet. Even if it is a great classic, the sip wants be mild regardless of the alcohol content.
