Vineyards: San Donato in Poggio Soil: clay-sandy with generous presence of marl. Harvest: manual with selection of bunches in the field. Vinifcation: The vinification of our “sparkling” wine is done in two stages.
The first phase consists of producing a “base” with the characteristics we are looking for, potential alcohol lower than 12° and a sustained acidity around 7.
The base is thus fermented normally.
In this phase we freeze a part of the juice which will serve as a “tool” for refermenting the wine in the bottle in spring.
The second phase, around April, allows us to incorporate the NON-fermented juice that has been frozen, re-incorporated into its base and immediately bottled. This means that the fermentation that takes place in the bottle creates the CO2 which, trapped in the bottle, will make our Irrequieto effervescent.
Elevàge: the base refines in a fiberglass tank for 6 months, after adding the juice it refines for 2 months in the bottle, for optimal secondary fermentation.
Winemaker’s notes : The restless is one of our most playful and fun expressions, it is effervescent, has a very low alcohol content and compulsive drinking.
Coral pink in color, crunchy, mineral, salty and citrusy, the Irrequieto from Sangiovese.
Straw yellow to the eye, refreshing, with a strong note of pear and acacia flowers, the Irrequieto from Trebbiano Toscano.
