The oil Exta Ve rgine Olive St. Donatino is made from olives of our established for a minimum of 80% of plants of varieties Frantoio, Correggiolo, Moraiolo and Leccino, alone or together, and for a maximum of 20% by plants of other varieties of the area. Each oil is harvested by hand directly from the tree. The olives are placed in special cassettes fo rate from each side to facilitate aeration and, consequently, a better conservation. Within 72 hours of harvest, the olives are taken to mills for processing, combining a strong vocation to craft cutting-edge technologies that allow high sanitation standards.
